Introduction
I am not a gourmet or professional cook. I know what I like and know how to prepare it.
You may be able to do better, experiment. Use this maybe as a base, a place to start
and innovate from!
Ingredients
- butter 2-3 tbsp
- 1/4 - 1/2 clove of fresh garlic chopped fine
- 1 green onion chopped
- fish batter
- 1/4 cup of white wine
- fresh mushrooms if you like
- salt and fresh ground pepper to your tastes
Intructions
Start by melting butter on medium to low heat. This same heat setting will be kept for the
entire recipe. Too hot and you will burn stuff before it is cooked. Too cool and it will not cook.
Put the garlic in once the butter is melted and bubbling.
Wait until the garlic is slightly browning, not burned, then add the green onion.
Let this cook for a few minutes.
Take your fish, I have used Sea bass, lake perch, and cajun catfish and dip in in your
batter. I use a batter from Golden Dipt and very light shake it in a bag with the fish.
All the fish I use are mild so it is imperative to not overpower it with a lot of any one taste.
Now add the fish. Surround it by fresh mushrooms. If you don't like mushrooms, you don't
have to, it does not really add much to the taste. It is more to have the joy of
mushrooms!
It will take 5-10 minutes per side. I recommend flipping it each side twice to cook right
through. I leave skin on to preserve moisture and add taste.
Once done I like to add 1/4 cup of white wine, not too dry not too sweet. Let simmer
covered for 2-5 minutes. Thats it ready to serve!
I like to serve it with rice, one or two vegetables and white wine.
